Q. Can I freeze deli sliced meats, i.e. ham etc? If I can, that would be great as I could not run to the deli every couple of days. Liz, Ringwood.
A. Hi Liz,
Yes you can freeze deli meats for up to a month. Interleave the slices with freezer paper or greaseproof paper before actually freezing so you can just take out the number you need, otherwise you'll have a frozen lump to thaw and use. If you have cold cereal for breakfast, wipe the inner bags over, carefully open them and cut them into squares instead of buying freezer film.
You can also make up sandwiches and rolls with the fillings and freeze them ready to grab and go.
Wrap the meat well, or store in freezer containers to avoid freezer burn and that horrible 'freezer' taste. Double wrapping in plastic wrap and then in freezer bag with all the air extracted will help to keep it in deli fresh condition.

Q. I was sure while looking through the recipes I came across a recipe to make hamburger sauce similar to that on a Big Mac burger. My husband LOVES this sauce and if I can stop him buying burgers and make them for him at home that would be great - a HUGE saving for both the wallet and the waistline! Barbara
A. I think this may be the recipe you are looking for, although it's certainly not good for the waistline! This is my version of that yummy sauce.
Cath's Big Mac Sauce
1/2 cup thick mayonnaise (I like Helmann's if I don't have any MOO mayo)
2 tablespoons French dressing (at the moment I'm using Aldi)
1 tablespoon tomato sauce
1 tablespoon sweet mustard pickles (I use Rosella)
1 tablespoon very finely chopped onion
1 teaspoon white vinegar
Mix all together. Let sit about 1/2 hour before using.
And this is my family's favourite burger sauce - a simple, spur of the moment creation I made about 10 years ago that they now call "that special sauce" and insist on it whenever we have burgers. It's even popular with the crew when we go camping and it's my turn to cook.

Tomato sauce
Coleslaw dressing
Mix equal quantities together, the mixutre should turn a soft red. Then spread generously over the hot burger pattie before adding the other garnishes.
