I'm not a fan of sweet drinks, but I absolutely adore pink grapefruit cordial.
It's slightly tangy, a little sweet and truly refreshing on a hot day. A tall glass of this pretty pink drink, topped off with ice cubes, is the perfect drink to enjoy when it's hot, and this recipe means you'll be able to enjoy it year round, for a few cents a glass.
Ingredients:
1-1⁄2 cups caster sugar
3⁄4 cup water
3 cups pink grapefruit juice (see note)
Method:
Make the sugar syrup by placing the sugar and water into a small saucepan over low heat. Cook, stirring, until sugar dissolves. Increase heat to high. Boil, without stirring, for 10 minutes. Set aside to cool slightly. The syrup is slightly thickened. Stir in the grapefruit juice. Pour into a clean, hot, sealable bottle or jug. The container needs to be hot because the sugar syrup will still be very warm, and you don't want thermal shock to shatter the bottle. Refrigerate for 3 to 4 hours or until chilled.
To serve, one-third fill serving glasses with cordial. Top with water. Serve.
Note: 12 pink grapefruit should give you 3 cups of juice. If you can't get pink grapefruit, bought juice from the chiller cabinet works too.
