Rosemary Oil
Ingredients:
1/2 cup dried rosemary*
1-1/2 cups good quality extra virgin olive oil
Method:
It is important that your rosemary is thoroughly dehydrated, otherwise your oil will go rancid and the herbs will go mouldy.
Cut the rosemary sprigs into smallish pieces so that they fit in a 500ml jar. Cover with the olive oil, right to the top of the jar. It is important that the rosemary is completely covered, to avoid oxidation. I like to fill the jar to within 6mm (1/4 inch) of the top.
Put the lid on and store in a cool, dark cupboard for 6 weeks to allow the rosemary to infuse the oil.
Strain the oil, and decant into a clean, dark bottle. I use a recycled glass olive oil bottle, and I have used brown glass bottles when giving this oil as a gift.
The oil will keep for months on the shelf. I like to keep it in the pantry with the other oils, ready to grab and use when cooking.
Ways to use your rosemary oil:
When roasting vegetables
To add flavour to chicken
Drizzle over potato wedges before baking
