You can buy corn relish at the supermarket… but once you taste this homemade version, you may never want to again.
This MOO Corn Relish is a classic favourite — sweet, tangy and full of flavour. It’s perfect for using fresh corn when it’s in season, and it keeps beautifully in jars so you can enjoy it long after corn disappears from the shelves. Serve it with sandwiches, burgers, sausages or cheese platters, or add a spoonful to salads and wraps for a burst of flavour. Ingredients 1 tablespoon extra virgin olive oil 300g red capsicum, seeded and diced 200g onion, diced 1½ cups (375ml) apple cider vinegar ¾ cup (165g) caster sugar 1 small red chilli, finely chopped* 2 teaspoons turmeric 2 teaspoons mustard powder 1 teaspoon salt Kernels from 4 fresh corn cobs** 2 teaspoons cornflour *Leave the chilli out if you prefer a mild relish. **If fresh corn isn’t available, use thawed and well-drained frozen corn. Method Heat the olive oil in a large heavy-based saucepan over medium heat. Add the capsicum and onion and cook for 8–10 minutes, stirring occasionally, until softened but not browned. Add the vinegar, sugar, chilli, turmeric, mustard powder and salt. Stir over low heat until the sugar dissolves. Increase the heat and simmer uncovered for 5 minutes. Add the corn kernels and cook for 5–10 minutes, stirring occasionally, until the corn is tender. In a small bowl, mix the cornflour with 2 tablespoons of water until smooth. Gradually stir this mixture into the relish. Bring the mixture to the boil, stirring continuously, until it thickens. Spoon the hot relish into sterilised jars and seal.
