Easy MOO Waffles
Last year, the kids gave me a waffle iron for Mother’s Day, and I absolutely love it. I’m not usually a fan of kitchen gadgets, but this is one appliance that has certainly earned its place in the cupboard. It has been very well used since the day I received it.
Waffles are quick, easy and inexpensive to make, so there is no need to spend around $4 on a packet of waffle mix. This simple recipe uses basic pantry ingredients and takes only a few minutes to prepare.
We enjoy waffles for breakfast, lunch, dinner and dessert—although not all at once!
Serve them with fruit, syrup, ice-cream, custard, jelly, baked beans, eggs, sausages or whatever you have on hand. The topping possibilities are limited only by your imagination and the contents of your pantry.
Waffles
Ingredients
1 cup self-raising flour
1 teaspoon sugar
1 teaspoon salt
2 tablespoons oil
1 cup milk
2 eggs
Method
Place all the ingredients into a mixing bowl.
Beat until the batter is smooth and free from lumps.
Preheat the waffle iron according to the manufacturer’s instructions.
Pour approximately ½ cup of batter into the waffle iron for each waffle.
Cook for 2–3 minutes, or until the waffles are golden, crisp and cooked through.
Serve immediately with your favourite sweet or savoury toppings.

Cheapskates Tip
Make a double batch and freeze the extras. Let the waffles cool completely, place baking paper between them and store in a freezer bag. Reheat straight from frozen in the toaster for a quick breakfast, snack or easy dessert.
