Fantasy Slice
This slice is one we all love, the recipe was given to me by Wayne's aunty just after we were married (it was a VERY hot summer that year and no bake was everyone's goal).
Over the years I've made many different versions of this slice, using the ingredients on hand.
I've used a combination of sweet biscuit crumbs, because I don't often buy biscuits, so rarely have a full packet or two on hand. When I do buy biscuits, the crumbs from the packet and the bottom of the biscuit tin get poured into a container and put in the freezer. When there's enough crumbs they are used to make a sweet treat.
And the recipe calls for sultanas, but I've used mixed dried fruit, chopped dried apricots and even glace cherries when I haven't had sultanas. They are all good in this slice!
I don't particularly like walnuts so sometimes they have been swapped out for slivered almonds. You could use pecans or macadamias or hazelnuts if you have them, or prefer them.
The chocolate is whatever is in the pantry. It could be choc chips or melts, or it could be plain milk or even dark chocolate. Whatever I have at the time goes into the mixture.
It's very versatile!
Fantasy Slice
375g crushed shortbread biscuits, crushed
60g crushed walnuts
100g finely chopped chocolate
2 tbsp honey
180g butter
1 cup sultanas
1 tsp coffee, dissolved in 3 tbsp hot water
Combine crushed biscuits, nuts and chocolate. Melt honey and butter over a low heat and stir into the biscuit mixture. Add the sultanas and coffee liquid, mixing well. Press into a slice tray. Set in fridge. Ice with chocolate icing.
