Poor Man's Steak

Oh the name of this recipe had me immediately, after all who wouldn't like to have steak on the menu? I know my family would be excited to see steak on the meal plan. It is a rare and extravagant treat for us.

So the name Poor Man's Steak had me scrolling down to find out more. I first heard about it from one of my favourite You Tube Channels, White Cottage Co, and off I went to hunt down a recipe.

Turns out there are a lot of variations of this recipe; each one seems to be unique to the particular cook so I looked at quite a few, made some notes and came up with my own version.

My family love it! And even though it is January right now, and the weather is more suited to salads, Poor Man's Steak is still delicious with a side of wedges or chips and a green salad. In winter it goes well with mashed potato and veggies (for ease I often use a frozen peas/corn/carrot mix).

The original recipe called for a can of cream of mushroom soup to make the gravy. I use my Condensed Cream of Chicken soup base and added a jar of mushrooms with the broth, seasoned with pepper and it is delicious.
,Ingredients:
1kg minced beef
1 cup cracker crumbs*
1 cup rolled oats
1 cup milk
2 eggs, beaten
1 onion, finely diced
1 ½ tsp salt
½ tsp black pepper
1 clove garlic, crushed
¼ - ½ cup plain flour, for dipping
3 tbsp butter, for frying

Gravy:
1 can Cream of Mushroom Soup**
1 soup can full of milk

Method:
Mix the cracker crumbs, oats, milk, eggs, onion, and seasonings. Add the mince and mix to combine.
Shape the meat mixture into thick burger patties. It should make 10 large, thick patties.
Roll the patties in flour.
Melt the butter in a large frying pan, or on a flat grill. Fry the patties over medium/high heat for a few minutes on each side to give them a nice sear.
Place the browned patties into a  greased baking dish.
Mix cream of mushroom soup and milk. Pour over the patties.
Bake, covered, at 180 degrees Celsius for 50 - 55 minutes. Remove cover and continue baking for another 10 minutes.
Serve with the gravy.

*I save the crumbs from cereal packets and of course cracker packets in an airtight container and add these to crushed crackers to make up the quantity needed (because I usually at least double the recipe). Weet-bix and/or cornflake or rice bubble crumbs can be used too.

**You can use MOO Cream of Condensed Soup, made with mushrooms, in this recipe if you don't use tinned soups.
