Tuna Surprise

This is a truly budget friendly meal, and it is tasty too. When disaster struck this was one of the meals that fit within my $200 a month budget that every one would eat and enjoy. 

It's easy to stretch too, by adding more rice or extra veggies if you have them.

You can make the basic tuna surprise and it is surprisingly good. Or you can embellish it with extra veggies and seasonings, and add crumb or cheese or chip toppings, whatever suits your taste and your budget.

Ingredients:
1 cup rice
1 400g tin tuna, drained
1 cup frozen mixed veggies
1 onion, diced
1 tin cream of chicken soup (or MOO equivalent)
Grated cheese

Method:
Pre-heat oven to 180 degrees Celsius. Cook the rice in boiling water. While the rice is cooking, drain the tuna. Add the tuna, frozen veggies, diced onion and cream of chicken soup to a casserole dish. Stir to combine. Drain the rice and add to the casserole dish, stirring through. Sprinkle the top with grated cheese, or whatever topping you prefer. Cover with foil and bake for 20 minutes. Remove foil and bake a further 15 minutes until cheese is golden and casserole is heated through.

This recipe freezes, thaws and reheats well.

It is a great Double Up recipe, cook once, eat one, freeze one for later.
