Vegemite Steaks - June 2018

​This is something my mum used to make for us when we were kids and something that I make for me (I'm vegetarian) when my husband and kids are having meat and veg. I usually have to make extras as they love them too. Good way to use up bread that is going stale.

Slices of Bread (you get 2 steaks per 2 slices of bread)
Butter/margarine
Vegemite
1-2 eggs
a bit of water
Oil for frying

Method
1. Make vegemite sandwiches - be as generous as you like with the vegemite
2. Cut the crusts of 2 parallel sides then cut sandwich in half
3. Beat the egg/s and add a bit of water to extend the amount if you like. 
4. Dip the steaks in the egg mixture until completely covered
5. Fry in a bit of oil till golden brown on both sides. Serve with gravy and veggies.

Editor's note: My Mum used to make fritters to use up the ends of the bread and we loved them. At the time we just wolfed them down, never realising that when we had bread fritters money was tight. They tasted so good, hot or cold, that my brother and I would be able to trade them at school. I still make them, to use up the bread crusts and because they're just jolly good.
