31 Days of MOO No. 29 MOO Pasta
Pasta is the easiest thing to make, and it uses just two ingredients: flour and egg. You can buy specialty pasta flours, at a price of course. If you're a dedicated gourmet cook then it may be worth the expense to you. I use Aldi plain flour to make my pasta and it is always good and always a success.
A pasta maker is a nice thing to have, but not absolutely necessary. You can roll pasta with a rolling pin and cut it with a knife, but a pasta roller makes the job so much easier. They're not expensive - around $20 for a basic unit up to $300 for an electric machine, or around $180 for an attachment to fit an electric mixer.
You can also get moulds to make shaped pasta like ravioli etc., they're around $15.
Ingredients
6 eggs
6 cups of flour
Extra flour
Step 1. Beat 6 eggs in bowl
Step 2. Place 6 cups of flour in a bowl or on a cutting board and make a large indention in the center of the flour
Step 3. Pour eggs in the center hole of the flour and slowly mix until incorporated.
Step 4. Knead into a dough ball
Step 5. Cut dough into ½” strips
Step 6. Run through your pasta maker – large setting than gradually decreasing to your desired thickness
Step 7. Run through your pasta cutter attachment
Step 8. Place on pans or rack to dry
Step 9. Store in a cool dry place or freeze
