31 Days of MOO No. 12 Zucchini Flour
Zucchini flour may be new to you, it was to me last summer when we had a gazillion huge zucchini. A little searching and I found a way to use them that is useful, and now the price of wheat flour is rising faster than a bread dough, having this on hand will cut the cost of baked goods considerably.
Use it as you would regular flour with a ratio of 2/3 regular flour to 1/3 zucchini flour.
This time of year the zucchini are growing fast and big, so let a few get really big and then turn them into flour.
Peel your zucchini.
Cut into very thin strips and remove the seeds if they are big (small seeds are fine, they grind up).
Lay the strips on your dehydrator trays or oven trays and dehydrate at 50C for 6 - 8 hours until they are completely dry. Drying time will depend on the thickness of the slices, the moisture in the zucchini and the humidity so time is a guide only - you'll know when they are crisp.
They will be a very, very pale green, almost cream colour and the flour will be that colour too.
Let them cool and then process in food processor to grind to a fine flour.
Use zucchini flour in muffins and cakes, add it to stews and casseroles and gravies to thicken, add it to Cream of Anything soup mix to make a zucchini soup, add it to bread mix.
