31 Days of MOO No. 30 Russian Dressing
This is the traditional dressing for a Rueben sandwich, one of our lunchtime favourites. Whenever we have corned beef for dinner, I put aside a few slices to make these sandwiches for our lunch the next day, and of course I make this delicious dressing to go with them.
Ingredients:
1 tbsp finely chopped onion
1 cup mayonnaise
¼ cup tomato sauce
4 tsp bottled horseradish
1 tsp Tabasco sauce (or to taste)
1 tsp Worcestershire sauce
¼ teaspoon sweet paprika
Fine sea salt
In a mortar and pestle, mash the onion to create a paste, or use a large heavy knife to mince and mash the onion into a paste. Transfer the onion paste to a small bowl and whisk in the mayonnaise, tomato sauce, horseradish, Tabasco sauce, Worcestershire sauce, and sweet paprika. Season with fine sea salt, if desired.
The dressing can be prepared ahead and refrigerated, in an airtight container, for up to 2 weeks.
