31 Days of MOO 2024: No. 1 Rotel Mix

This isn't something we usually find on supermarket shelves, either in mix form or canned. Rotel is a blend of ripe, juicy tomatoes and spicy chillies, created in Texas, and often used in Mexican and Tex-Mex recipes.

This is a dry mix that keeps on the pantry shelf for up to 2 years if it is kept cool, dry and dark, and it adds an extra zing to tacos, enchiladas, Mexican Lasagne, https://www.cheapskatesclub.net/mexican-lasagne.html soups and chilli.

This mix uses dehydrated tomatoes, diced and halved, and tomato powder. Save the skins from the tomatoes you peel to bottle or dehydrate and add them to the dehydrator. When they are dried, powder them. They make the richest tomato powder and there will be no waste. Tomato powder can be used to add extra flavour and nutrients to gravies, sauces, soups and stews, and added to Cream of Anything Cup-a-Soup to make tomato cup-a-soup. https://www.cheapskatesclub.net/cream-of-anything-cup-a-soup.html

Ingredients
1/2 cup dehydrated, diced tomatoes 
1 cup dehydrated, halved tomatoes 
1 tbsp tomato powder 
3 tbsp dehydrated, green chilis
2 tsp dried cilantro 
1/2 tsp salt
1 tsp jalapeno powder 
1/2 tsp garlic powder 

To make: 
Add 2 cups of cool water to the ingredients and stir to combine. Let the mixture sit 15 minutes to rehydrate. Use as you would one can of Rotel in recipes. 

​This recipe makes the equivalent of one can of Rotel.
