31 Days of MOO No. 14 Cath's Bagel Seasoning
I'd been hearing about Everything But the Bagel Seasoning for ages; it was all over the socials and my curiosity was tweaked.
As soon as I saw the price, my curiosity died. But the Cheapskater in me stood tall, and I checked the ingredients on the pack - I had everything except the flaked sea salt (have you seen the price of that stuff? The cheapest is $6 a box, the most expensive I could find in my supermarket was $10! For salt!).
I started digging around, looking at recipes, trying to find common ingredients amongst them all, and the other optional ingredients. Then I took out the suggestions I knew we wouldn’t enjoy, played around with the ratios of the other ingredients and this is what I came up with.
And it is good! We love it, not only on bagels, but sprinkled over bread rolls although so far our favourite is to add it to the dough for tortillas and have seasoned tortillas, and they are so good, everyone wants more every time I do a batch.
Ingredients:
6 tbsp sesame seeds
2 tbsp dried onion flakes
2 tbsp garlic granules
2 tbsp poppy seeds
2 tbsp flaked sea salt*
Gently toast the sesame seeds over a very low heat until they just start to change colour. This doesn't take very long, so watch so they don't burn. Tip them into a bowl and swirl around so they cool. When they are completely cooled, add the remaining ingredients. I put everything in a repurposed Vegemite jar with a screw top lid, put the lid on and then give it all a good shake to mix it up. Store your bagel seasoning on the shelf in the pantry, with the lid on.
Notes:
The original recipe I based this on used white and black sesame seeds at a ratio of 2:1. Black sesame seeds are available from Hindustan Imports.
I don't have flaked sea salt, it is too expensive. I use 2 tablespoons rock sea salt and use the mortar and pestle to break it down to slightly smaller rocks. You could use table salt, but you'll need to remember to give the jar a good shake every time you use to as the salt will sink to the bottom of the jar.
