Apricot Meatballs
These meatballs are delicieous!
My family loves them with rice, or over mashed potaote with a little of the glaze drizzled over them.
And in barbecue season, they are delicious with a salad.
As always, I try the original recipe and then tweak it to suit our taste. This one calls for 500g mince, I use 250g mince and 1 cup TVP rehydrated in vegetable stock; this cust the cost without taking away from the deliciousness of the meatballs.

apricot Meatballs
Ingredients:
500g mince
1 egg
1 cup breadcrumbs
1/2 small onion, grated
1 clove garlic, crushed
1 cup apricot jam
1/2 cup French dressing
Method:
Preheat oven to 180 degrees Celsius.
In a large mixing bowl combine the mince, egg, breadcrumbs, onion and garlic. Mix well and form into 1-inch meatballs. Place them in a single layer into an oiled baking dish or tray. In a small mixing bowl combine the apricot jam and French dressing. Pour over the prepared meatballs. Bake in the preheated oven for 25 to 30 minutes, or until cooked through.
