BBQ Chicken Seasoning/Rub

Who doesn't love a barbecue chicken? They are so convenient - pick one up, take it home and serve. And the flavour - that seasoning is so good. 

But have you noticed that barbecue chickens have gone up in price ($10 at Coles) and down in size? Makes you wonder if that delicious flavour is worth it.

Well what about if you can get that same delicious barbecue chicken flavour, with a hot, crispy skin chicken, any time you want it?

Just a note: whole chickens have been quite cheap the last couple of weeks - $2.99/kg which is my stock-up price, so check your supermarket or butcher to see if they're on sale near you.

It is so easy to use - just rub it generously all over the chicken then roast it as you normally do. Or if you have a rotisserie on the bbq, barbecue it. 

BBQ Chicken Rub (Makes enough to coat 6 No. 20 chickens)
Ingredients
1/4 cup coarse sea salt 
1/4 cup paprika (if you have smoked paprika, use it! The flavour will be divine.)
2 tbsp onion powder
1 tbsp garlic powder
2 tbsp thyme
1 tbsp black pepper
2 tbsp white pepper
1 tbsp cayenne pepper
1 tsp crushed dry rosemary 

Mix all ingredients and store in an airtight jar.
