Blueberry Muffins
I use frozen blueberries for this recipe, I buy them in bulk and portion them into ziplock bags so I just grab a bag and tip it into the dry ingredients. It only saves a few minutes of time, it's the convenience factor that I love.
Ingredients:
2 cups plain flour
1 tbsp baking powder
2 tsp custard powder
1 cup sugar
3/4 cup blueberries
2 eggs
3/4 cup milk
3/4 cup vegetable oil
Method:
Pre-heat oven to 190 degrees Celsius. Sift flour, baking powder and custard powder into a bowl. Add sugar and blueberries. In a separate bowl, mix milk, eggs and oil. Add to dry ingredients and mix until just combined. Spoon into 12 hole muffin tin. Cook for 15-20 minutes. Dust with icing sugar if desired.
