Cath's Brownies
I attended a retreat a couple of weeks ago, and we all shared in the catering, with everyone bringing something to share.
Morning and afternoon tea, and supper treats were allocated to me, so I made brownies and boy were they a hit!
Everyone raved over them, with many requests for the recipe.
My brownies are quick and easy to put together, and yes, they are deliciously gooey in the centre and crusty on the top. And they taste great because I use the best cocoa I can find and good vanilla, and plenty of it. I also use real unsalted butter. These amazing ingredients together make an amazing and apparently rave worthy, brownie.
Cath's Brownies
Ingredients:
125g unsalted butter- melted
1 cup sugar**
1/2 tsp salt
2 tsp vanilla essence
2 eggs - beaten
3/4 cup SR flour
1/3 cup cocoa powder
1 cup choc bits*
Method:
Mix butter, sugar, salt, vanilla and eggs with a spoon.
Add the flour and cocoa. Add choc bits.
Pour the mixture into a greased and lined square cake tin
Bake at 180c for 30 minutes or until edges are firm and the centre doesn't wobble - check with a skewer. The top should be crusty and golden, the inside should still be gooey. If you like your brownies a little more "cakey" bake another 5 minutes.
Remove from the oven and let cool in tin.
Remove from the tin when cold and cut into squares with a sharp knife.
*I use 1/3 cup white, 1/3 cup milk & 1/3 cup dark choc bits (Nestle or Cadbury brand).
**Use vanilla sugar for a better flavour. I make it by splitting six vanilla beans and putting them in a jar with 1kg white sugar and letting it sit for at least four weeks, giving it a shake every couple of days. You can buy it in the baking aisle too.
If you like nuts in your brownies, add 1/2 cup chopped walnuts.
I use Hershey's cocoa, it gives a richer flavour. Use the best quality cocoa and vanilla you can find.
