Cheat's Beef and Vegetable Soup
When you need a hearty soup in a hurry, Cheat’s Beef and Vegetable fits the bill. It’s a hearty meal in itself and you’ll have it on the table in 30 minutes! No need to make stock or for the long, slow cooking required when you use shin bones, this soup makes good use of everyday ingredients to save you money, time and energy.
500g beef mince
1 cup dried soup mix
3 medium carrots, diced
3 stalks celery, sliced
1 medium onion, diced
4 medium potatoes, peeled and diced
1 can tomatoes, crushed
2 cups pasta
Brown the mince in a frying pan and drain.
Add all the ingredients to a large soup pot. Cover with 3 litres of cold water and bring to a rolling boil. Cover, turn down the heat and simmer for 30 minutes.
Cheapskates variations:
· Soup mix: use Italian soup mix for a hearty soup that is a meal in itself.
· Substitute 3/4 cup raw rice for the 2 cups pasta.
