Dough Ingredients:
2 cups plain flour
1-1/2 cups low-fat cottage cheese
1 cup butter
Method:
With a pastry blender or a knife, cut the butter into the flour. Add the cottage cheese and knead into a ball of dough. Divide dough into 4 equal parts. Chill the dough for an hour as this dough is very soft and sticky. Sprinkle a little flour on the bench and roll each ball into a 30cm circle. Cut into 12 equal pieces (I used my pizza cutter to do this). Starting at the wide end roll towards the narrow. Place them on a baking paper lined baking sheet and freeze.
Take them out of the freezer. Preheat the oven to 180 degrees Celsius and bake for 20-30 minutes (bake from frozen, don't thaw). When they start to get golden brown flecks they are done. Be careful not to over-bake them. Serve them plain or glazed.
Glaze Ingredients:
1 cup icing sugar
3-4 tablespoons milk

Mix these ingredients together and pour over warm rolls.
