Dear Cath - December 2017

Q. Hi What is KFC mix please?...as in today's recipe? Thanks! Sue

A. This is our very own chicken coating, but its' not just for chicken. It goes very well on steak, sausages and rissoles too. The recipe is below, but you'll also find it in the Mixes Recipe File.

KFC Mix
Ingredients:
2 c plain flour
1 tsp salt
1 tsp basil
1 tsp oregano
1 tsp thyme
2 tbsp celery salt
2 tbsp ground black pepper
2tbsp dry mustard (I like Keens)
2 tsp ground ginger
1 tbsp garlic salt
6 tbsp chicken stock powder
8 tbsp sweet paprika

Method:
Use a balloon whisk to combine ingredients, being sure they are evenly distributed. Store in an air-tight container.  To use, dip chicken pieces into flour, then either beaten egg, or milk and then into breadcrumbs, dip into egg or milk again and roll in KFC mixture. Chill in fridge for 30 minutes. Spray  a pizza tray or similar baking tray with cooking spray and spread chicken pieces onto tray. Spray chicken with olive oil spray (can use vegetable oil)  and bake in a moderate oven 25 - 30 minutes until chicken is cooked through and coating is golden brown and crispy.

Q. Can you please provide information about the 2 tiers of products at Aldi? Karen

A. As a budget grocer, Aldi doesn't carry a huge range of products. The core product line started with around 600 products, and has grown over the years to around 1,400 products, 90% of which are Aldi private labels. Within this core product range of Aldi branded products there are usually two tiers:
  • a.the budget range
  • b.the premier range

​Just as when shopping at another supermarket, customers can choose between the budget baked beans and the premier baked beans, spaghetti, tea, coffee, diced tomatoes, oil, toilet paper, pet food, laundry powder to cover just a few grocery lines. 

Something to remember when shopping at Aldi: independent audits have confirmed that 100% of ALDI’s eggs, bread, fresh meat and fresh poultry, 93% of fresh dairy and 91% of fresh fruit and vegetables are Australian made.

​Q. I was wondering if Christmas fruit mince pies can be frozen; my husband loves them and Coles has them on special? Jodie

A. Yes, they can! We love fruit mince pies and tarts too, so on Boxing Day I always have an eye open for them, marked down in the bakery department, ready to make room for those super-early hot cross buns to appear. Aldi fruit mince pies are great value anyway, but when you can get them for 49 cents a packet stock up and put some in the freezer. They're a nice treat in winter, warmed with custard.
