Dear Cath

Q. Hi Cath - just wondering if you had a good savoury mine recipe I could try ? The ones I have tried are all too "herby" for my family! Thanks, Lorrae

A. Do I! This is a recipe I picked up from one of the older ladies at Church, way back when the boys were babies. We were making pies as a fundraiser and this is the recipe she used (she was an amazing cook - everything that came out of her kitchen was mouthwateringly good). I make this basic recipe and use it for mince on toast, in pies, as the base for a cottage pie, we have it with mash, sweet potato mash, or rice. I usually make a double batch and freeze it in meal sized portions.

In winter, I often pick up one of those veggie soup packs (the one with the carrot/celery/parsnip etc.) and use it instead of the individual diced veggies. It is a very forgiving recipe, and no herbs!

Mrs. Dean's Savoury Mince
Ingredients:
1kg  mince
2 large potatoes, grated
2 large carrots, grated,
2 large onions, grated
1 parsnip, grated
1 swede, grated
3 tbsp tomato paste
2 tsp Vegemite
1 pkt cream mushroom soup mix
1-1/2 cups water

Method:
Brown the mince and drain. Brown the veggies in the pan, then add the tomato paste, Vegemite, soup mix and water and stir. Add the mince, turn the heat down and let it simmer for about half an hour, stirring so it doesn't stick. I use this on toast, with mash and in pies.
