Q. I enjoy reading your monthly menu planners. A long, long time ago I saw Lamb Rollups, and scratched it into my meal plan book, but now I can't find it in the Recipe Files. Was this your own recipe or one you found somewhere else? Judith
A. The lamb rollups are my own invention and I don't really have a recipe. And just to make it even more interesting, they differ each time I make them, depending on what's in the fridge and how much time I have. Basically they are left-over lamb, sliced thinly then warmed with thinly sliced onion and diced tomato and a dollop of sour cream (watch the cream doesn't boil). This mixture is spooned over Lebanese bread (or wraps or tortillas or Mountain Bread - again, it depends on what's in the pantry) and topped with shredded lettuce and grated cheese. Rolled up and toasted in the sandwich press. We all love them and they are so quick and easy, ideal for sports nights and weekends.
