Dump Chicken

Getting dinner on the table doesn't need to take hours in the kitchen. It doesn't mean resorting to take-away or home delivery. It doesn't mean spending a fortune on so called convenience foods. 

You can get dinner on the table in just a few minutes if you take advantage of your slow cooker and use the "dump" method.

No, it's not garbage heated up and put on a plate, it's a simple strategy that will get dinner on the table with minimal input from you, in just a few minutes, without breaking the food budget.

In a nutshell, for dump chicken you take the chicken cut of your choice - breast or thigh fillets or maryland pieces or drumsticks or even a whole chicken,  put it in a bag, add the flavourings and seasonings of choice and put it all in the freezer until you're ready to dump it in the crockpot and let it cook.

How easy is that! 

The hard part is choosing the seasonings, marinade or flavour for your chicken. We like honey soy, Mexican, green curry, tandoori, teriyaki, sweet'n'sour, satay, well just about any flavour really.

Here are some ideas to get you started.

For each dump packet I use either two chicken breast fillets, diced or 8 drumsticks. This is plenty for my family of five. Adjust the quantity of chicken to suit your family's appetite.
BBQ Chicken
1/2 cup tomato sauce
1/4 cup water
1/4 cup packed brown sugar
1 pkt French onion soup mix
 
Chicken Cacciatore
1 jar passata sauce
1 zucchini, diced
1 capsicum, diced
1 onion, diced
1 tbsp mixed herbs
1 clove garlic, crushed

Tropical Chicken
1 can pineapple pieces with juice
1/4 cup packed brown sugar
1/2 tsp nutmeg
1/3 cup orange juice
1/2 cup sultanas

Honey Soy Chicken
1/2 cup ketchup
1/4 cup honey
1/4 cup soy sauce
2 tbsp lemon juice

Mexican Chicken
1 cup salsa
1 can diced tomatoes
1 onion, diced
1/2 cup diced celery
1/2 cup diced carrots
1 packet taco seasoning

Teriyaki Chicken
1 clove garlic, minced
1/3 cup soy sauce
2 tbsp rice wine
1-1/2 tbsp cider vinegar
1-1/2 tbsp brown sugar
1-1/2 tbsp crushed ginger

Once you've made your marinade or flavouring, add it to the bag with the chicken. Squish it around a bit and it's done. You can freeze for the future or use immediately. 

To cook, add to the slow cooker and cook on LOW for 8 hours or until the chicken is done.

To cook from frozen, thaw the dump bag in the fridge overnight, then add to the slow cooker in the morning and cook on LOW for 8 hours.
These meals make getting dinner on the table easy, and if you buy the chicken on sale, cheap. I try to buy chicken fillets for no more than $6.99/kg and drumsticks for $2.49/kg. I look for whole chickens at $2.99/kg. When I find chicken at these prices I stock up!

If you haven't tried dump chicken, give it a go. When you know you have a busy day, the thought that dinner is done takes a lot of pressure off around 5pm.
