Gnocchi with creamy tomato sauce
7 August 2020 by Cath Armstrong
Aldi sells gnocchi that is shelf-stable, no refrigeration required, and it's not too bad. Combined with a simple sauce it makes a very quick and tasty and cheap dinner. At $2.79 a packet it can easily become the main ingredient in a budget friendly family meal.
We like it with this creamy tomato sauce, garlic bread and salad on the side.
Ingredients:
1 pkt gnocchi
1/2 cup cream (or evaporated milk - MOO is fine)
1/4 cup tomato pasta sauce (or 1/4 cup tomato soup, pinch basil, pinch oregano, pinch garlic granules)
Grated parmesan for serving (or whatever cheese you like or have on hand)
Method:
Cook the gnocchi according to the directions on the packet. It only takes a couple of minutes, so this is a quick dish. Combine the cream and pasta sauce, stirring until all combined. Heat gently over a low heat - you don't want it to boil or the cream will curdle. When the gnocchi is ready, drain and pour into the sauce. Toss gently to combine. Serve immediately with grated parmesan to taste.
This makes four hearty serves, I stretch it to five, for under $4, or 80c a serve.
