Making Fresh Lasagne

What do you do when someone asks for lasagne for dinner and there isn't one in the freezer?

You change the meal plan and make two from scratch! 

And it's easy because you have a fully stocked, ingredients based pantry that allows changes without upsetting the grocery budget. 

Having mince on the shelf, ready to use is a good start, no need to brown. Rehydrate some TVP  while you're chopping the onion and carrot and when it's cooking with the tomato paste and garlic, make the white sauce (I love my microwave method) saves time. 

Add the mince, TVP and  tomato soup and herbs, and let it all simmer until you're ready to put the lasagne together. 

I like to do a layer of meat sauce, a layer of pasta, a layer of meat sauce, a layer of white sauce, a layer of lasagne and repeat, finishing with a layer of the white sauce. Sprinkle with a little parmesan and some mozzarella (or whatever cheese you have) and into the oven for 35 minutes. Let it rest 10 - 15 minutes before cutting, then enjoy!
Ingredients:
Sauce:
750g mince
2 cups TVP rehydrated in 2 cups boiling water (or stock)
2 large onions, chopped
2 large carrots, grated
2 tbsp tomato paste
garlic to taste
1 tsp oregano
1 tsp sweet basil
salt and pepper to taste
2 tins tomato soup
1 large tin diced tomatoes
