​Money Saving Lentils as Meat Substiute

At times, brown or red lentils can be substituted for some of the minced steak when cooking meals such as spaghetti bolognaise, meat pies, shepherds pie and even rissoles. You can use canned lentils or soak and cook your own...even cheaper.

​How to Stretch a Meal on a Budget

Approximate $ Savings: $20

​ We are on a pension so have to watch our spending. At the supermarket I got a tray of 4 small pieces of lamb fore qtr marked down to $2. I decided to roast them and did a whole heap of vegetables as well. We used 2 pieces for the meal and next day I chopped the meat from the bones of the other 2 and cut all the leftover Veges, mixed them with gravy (leftover from meal) Made some pastry and combined, it made 6 lamb and Veg pies. Not bad for 4 meals for 2 people with about $3 worth of ingredients.

​Double Dipping Casseroles

Approximate $ Savings : Approx. $10 that you would have spent for another meal

I often find that at the end of a meal there is an extra amount of sauce left-over from the casseroles that I have cooked e.g. Mediterranean Chicken Bake or Chicken Dijonnaise (recipes can be found on www.taste.com.au). Rather than throwing away this delicious and flavoursome sauce, I boil some pasta, add it into the sauce and hey presto: lunch for the following day! I have utilised the sauce instead of wasting it and more importantly, I save time!

​How to Stretch a Meal on a Budget

We are also on a pension, and this winter I discovered lamb off cuts at Coles. They are in the section of the meat fridge with the offal. At $2-3 per tray I turned them into stew with lots of vegetables and when cooked added a little Gravox and some herb dumplings (rub a little butter into some self raising flour with a little dried herbs in then bind with milk and put walnut sized pieces into the stew and simmer with lid on for 10 mins). I made 2 meals for 5 with 1 lot of meat. Mega savings.
