31 Days of MOO No. 3: MOO Soy Sauce
This isn't an authentic soy sauce, but it makes a great MOO substitute, especially if you are avoiding soy. Does it taste like the soy sauce you buy? Almost, but not quite. It does make a cheap and tasty alternative and can be used to replace soy sauce in any recipe.
Ingredients:
250ml beef stock
1/4 cup apple cider vinegar
1 tbsp molasses
1/2 tsp garlic powder
1/4 tsp ground ginger
1 tsp salt
Method:
Combine all ingredients in a saucepan. Bring to a boil, then turn down to a medium heat, so the mixture is simmering. Simmer for 10 minutes, or until the sauce has reduced by half.
Store in an air-tight jar in the fridge for up to 3 weeks.
Note: Don't be tempted to reduce the salt. It not only adds flavour but acts as a preservative.
