Hello Cheapskaters,
Happy New Year. I hope that 2015 is the most joyful and prosperous year yet for you.
Every day, I do something to save money. Every single day. Whether it's to put back an item I don't need to purchase right away or choosing to wash out a sandwich bag, I am doing something to save. Sometimes when I look back at the week just gone I can't even think of all the ways I saved that week. Saving money, time and energy has become a habit.
I haven't figured out exactly how much I save on a weekly basis, but I do know that my total savings exceeds $22,000 a year, because that's the income I replaced when I changed from a spendthrift lifestyle to living the Cheapskates way.
I've been pondering those little savings the last few weeks, wondering if it is just me who washes and re-uses plastic bags until they fall apart or who rinses the jam jar with milk to make a milkshake, or who cuts the ends of tubes of toothpaste and hand cream to scrape every last smidge out. I know I'm not.
So I'm issuing you a challenge: make 2015 your year to save and then list those savings on my blog (and your own if you have one).
I've done the calculations, and checked and re-checked them, and if everyone who reads this newsletter today posts just one thing they've done to save money every day for a year there will be over 10 million savings listed! Wow! And that's just if today's readers post, not every newsletter subscriber or newbies who join us later in the year!
So pop on over to my blog, Debt Free, Cashed Up and Laughing and look for the Everyday Savings page and leave your first saving. If you have a blog grab the 2015 Saving Challenge button to use on your own site. Together we can make saving money, time and energy an Australian habit!

Re-purposing Jars into Classy Dessert Dishes
Approximate $ Savings: $20
My daughter needed to make 9 very small choc-orange mousses for a dinner party as it would be a buffet type dessert bar. We were having difficulty finding small enough containers and when we did, they were around $3 each. I ended up buying 10 jars of baby food for $10, peeling off the labels and freezing the puréed apple in the jars to use as apple sauce, and using the cute little jars as dessert dishes.

Easy Needle Threading
Find it frustrating to thread needles whether hand sewing of by machine? Snip the thread blunt horizontally. When you dampen the thread, DAMPEN THE EYE OF THE NEEDLE AS WELL. The cotton just slides through effortlessly.

Wrapping, Say No
Approximate $ Savings: $20 each year at least
Years ago I took advantage of January sales and bought 3 metres or so of Christmas fabric at a fraction of its pre-Christmas price. I made simple drawstring bags of various sizes and we use them instead of wrapping paper at Christmas time. Easy to use, drop in the present, pull the string and we loop a star cut out of an old Christmas card for the tag. Everyone loves them, they enjoy giving the bag back when they have opened their present and there is no rubbish to get rid of. We even recycle the tags where possible. It has been so successful we even made a sparkly glittery one for birthdays. Only needed one of those and it saved us hundreds of dollars in wrapping paper over the years. I have even made sets for Christmas use for my daughter-in-law and daughter when they asked for them and they got them as Christmas presents that year. A new and 'green' family tradition.

3. Cheapskate's Winning Tip

Miracle Pan Release
I found a recipe for this stuff called Miracle Pan Release and you use it to coat all your baking tins and trays instead of using butter/margarine and flour. It is 1 cup of butter or margarine, 1 cup of Copha or any solidified fat and 1 cup of plain flour. Beat all together until it is creamy, looks like whipped cream. Store in a jar in the cupboard. When you want to use it just use a pastry brush, folded paper towel or your fingers to coat the insides of your tins or trays, just like you would if using butter/margarine and flour for dusting. Be careful though, this stuff works so well that the first time I used it my cake fell out of the tin and onto my stove smashing my cake. I only made a half batch the first time in case it didn't work but this time I will make a full batch because it works so well. Keep in the cupboard and it lasts a long time.

Cheesy Filled and Grilled Quesadillas
Now the Christmas and New Year rush is over and all the rich food indulged in, it's time to get my grocery budget back on track and get back to my easy meal plan. Quesadillas are a favourite with my family because they are tasty and quick (always a good thing with hungry boys to feed). They are a favourite of mine because they are tasty, quick and cheap - they turn small amounts of cheese, tomato, meat, olives, capsicum, salsa, chicken, sour cream or whatever you have into amazing meals. Did you pick up on the cheap? That's because they use up all those small quantities of foods, saving them from the compost and you throwing good money away.
Cheesy Filled and Grilled Quesadillas
Ingredients:
2 small tortillas
1/4 cup sliced olives
1/4 cup chopped cooked chicken or beef, shredded
1/2 cup low fat cheese, grated
2 tbsp tomato salsa, drained
Method:
Heat a heavy griddle or fry pan over a medium heat. While the griddle is heating, put the olives, chicken or beef, cheese and salsa in a bowl and toss together. Spray one side of each tortilla with cooking spray. When griddle is hot, lay one tortilla on grill, sprayed side down. Spread filling mixture over the tortilla and cover with the other tortilla, sprayed side up. Cook 3 - 4 minutes, or until cheese has started to melt, and you get nice grill marks, then flip and cook other side for another 3 to 4 minutes. Remove from the pan. Cut into wedges and serve with taco sauce, guacamole or another favourite dipping sauce.
This makes 1 quesadilla – double, triple, or quadruple for more servings. Use your favourite fillings or the leftovers in the fridge to jazz your quesadilla up.

Friday: Sausages and salad
Saturday: Tacos
Sunday: Roast beef, baked vegetables, broccoli, carrots, gravy
Monday: Chicken & mushroom risotto
Tuesday: Lasagne and salad
Wednesday: Rissoles, salad
Thursday: Pizza
In the fruit bowl: bananas, kiwi fruit, and strawberries
In the cake tin: Christmas cake, shortbread, sultana biscuits

7. The $300 a Month Food Challenge with Wendy
Wendy is having a well-deserved break for the next few weeks so we are going to revisit the $300 a Month Food Challenge Archives.
From the Archives: It's the Start of a New Month and a New Challenge
Well, a new week has started and a new month is about to begin. Welcome to all the new people who have joined the challenge in this last week. I'm sure you are all busy writing menu plans and shopping lists.
How are you all going with the challenge? Fruit and vegie prices have increased enormously. Last Thursday was my top up day. I needed milk, lettuce and cucumber. Milk had reduced by a few cents, but lettuce is up to $3 each and cucumbers were $2 each. As our lettuce went to seed while we were away, I had to buy one. But I choose to go without the cucumber.
I also stocked up on jam last week. Coles has Cottees jam for $2 each for 500gms. A good bargain, so I bought 6 with my slush fund money.
The fruit and veg shop at Fountain Gate will be closing soon due to the renovations. As it is the only one in the centre, I'll be looking for somewhere else to shop. Might be a good time to check out the Dandenong Market again as they have now finished their renovations.
To help offset the increased veggie prices, I've decided to forgo buying any packets of sweet biscuits. I was allowing $4 in my food budget each month, but this will have to go. I'll just have to bake more. I'll also be reviewing my shopping list to see if there is anything else I can cut out.

2015 is Looking Bright
Well I just sat down to take a good look at this budget for next year, I knew I had to add a couple extra things to it such as a wedding and a trip to Melbourne (girls need their US passports).
I was hoping to be not only debt free but to have some savings, and we will, it will only take me an extra month to be debt free instead of a couple and even with the extra expenses we will have quite nice savings...all going well that is...I am a tad excited and can't wait till next year as things start to come together.
On the upside I found extra money that I forgot I had stashed, it will be used for our 25th wedding anniversary this month...a night away and dinner at Jamie Oliver's new restaurant...he loves Jamie Oliver...so that is all paid for as well...so all the stress I was feeling is slowly starting to disappear.
I know I am a stress head at times but nice to know that we are on track.
Also the menu planning is going well we have well stocked cupboard and plenty of snacks and saving money.

I've just started the 5:2 or Fast Diet, which is basically fasting (500 calories for women, 600 calories for men) 2 days per week (non-consecutive days are recommended), eating normally on the remaining five. There are a number of books you can get from your local library and also a website (thefastdiet.co.uk) which provides lots of detail and support. The only thing recommended that you buy are digital scales which K Mart have for about $12. It's early days for me, but you don't have to spend out on memberships or special meals or ingredients, so worth a try! Good luck.

Sign up to myfitnesspal.com it is amazing and you can then add an exercise program like Fitstar for free. These are free apps. They have lots of great advice, track everything, and scan barcodes, keeps graphs. It’s amazing! Give it a go, its working for me.

As ridiculous as it sounds, portion control! Weigh or measure EVERYTHING. Portions should be in line with providing sufficient nutrients and kilojoules for your age and activity level - this means you may have to read up on nutrition requirements, your State's Health Department will have this information readily available on their website. You won't even have to switch to, for example, low fat products, which often replace the fat with sugar. Eat slowly, DON'T HAVE SECONDS ON ANYTHING and be HONEST. Eating this way means you don't have to deprive yourself, it can be accommodated anywhere, anytime and doesn't require additional outlay for special ingredients.

Over the last 4 months I have lost 15kg (about 30 left to go) just by calorie counting. I use Google to look up calorie amounts of foods or My Fitness Pal is a good free online tracker. If you don't have access to the internet then you can buy a calorie counter book from newsagents or book shops for around $10. I had tried various diets but the food required was too expensive. I try to make healthy choices like fruit and cold boiled eggs for snacks. I have found this to be the only way I can afford to lose weight. Good luck - it's time consuming at first but it won't take long for you to get the hang of it. I just use an unused school exercise book to keep track.

Subscribers to our free newsletter can use the Change Your Address form (under Customer Service in the menu) and fill it out. Once you've filled it in click the send button and we'll do the rest. Please remember to include your old email address so we can find it in the list as well as the new one.

When you login to the Member's Centre you will be told how many days of membership you have left once you have 30 days left. Just click on the link to renew and your membership will just continue on, uninterrupted.
