Hello Cheapskaters,
We're still travelling, enjoying beautiful Queensland. It's two years since we last visited, and while we are revisiting some places, it's really exciting to find new hidden treasures to enjoy. I say hidden treasures because we're trying to avoid the "touristy" areas, finding more off the beaten track hidden gems (and there are so many of them!).
Camping has been so nice, every night we've had beautiful spots to set up, with stunning views. We've even met some of the wildlife up close. Everywhere we've stopped so far, the people have been friendly and welcoming and helpful, especially when we mention we're hoping to stay away from the crowds.
Finding phone and internet reception has been a challenge, but we're managing to get into range every couple of days or so. It's funny how the tables have turned: the kids want to know where we are, how long we'll be there, where we're going next, when we'll get there, who we've met, and they keep telling us to be careful. Gotta love that they're taking care of us, instead of the other way around for a change.
Before I go, have you logged into the Member's Centre lately? The May Journal is ready, and it's full of good info, and there's a challenge for you too, something to keep you busy while I'm on holiday.

2. From The Tip Store
Repurpose Veggie Bags and Stack Flat
I portion and wrap my meat in the bags from the veggie section after they have been used to carry the veggies. I squash the meat as flat as possible (for ease of storage and defrosting) and store these portions inside separate plastic containers. These are the ones from the Reject Shop, (Quantum brand) and the 9 litre and smaller 4 litre are great for this. My freezer isn't exactly neat, but it also helps to stack them, and the boys retrieving them.

The Monthly Weeding Challenge
People often comment on my beautiful garden beds, and then proceed to tell me I must spend hours weeding. I don't! I have a monthly weeding challenge that goes like this:
1st - pull 1 weed
2nd - pull 2 weeds
3rd - pull 3 weeds
4th - pull 4 weeds
5th - pull 5 weeds
6th - pull 6 weeds
7th - pull 7 weeds
And so on. The day of the month determines how many weeds get pulled that day. Most days there are only a few to pull anyway, so it's a five minute at most job. Then, if I can't get into the garden to do anything else, at least the flower beds and paths are weed free.

My Device Book = Stress Free Recovery After a Hard Drive Failure
My computer hard drive recently failed and needed to be replaced. Of course, this happened unexpectedly, and my computer was so shot that it was impossible to complete a final backup to my external hard drive to save all of my data. But all was not lost since I keep a book with the details of all my devices. Recording these details now will save you hours later!
I organise my book by each device. I have a page for installed apps; all installed programs, details of its product key and expiry date, and any custom settings I use; the screen layout of apps (for smartphones/tablets); and the URL (website address) for all apps and programs for easy reinstallation.

Taco Tuesday
Tuesday night is chaotic at our house. Hannah works late, Wayne has a meeting and AJ doesn't get home until about 8.30pm. Which means that dinner has to be something that everyone likes and can grab as they have time.
Taco sauce can be made ahead and re-heated as needed. The lettuce, tomato, cucumber and cheese can all be prepared ahead of time and stored in the fridge until ready assemble the tacos.
Tacos are a favourite meal for us and as they are a grab'n'go meal I'll often switch the meal plan around and replace the Tuesday pasta dish withTaco Tuesday. Give Taco Tuesday (or any the day) a try and see if it doesn't become a new favourite tradition in your household.
Basic Taco Sauce
Ingredients:
500g mince
3/4 cup water
3 tbsp taco seasoning
8 taco shells
1/2 head lettuce, shredded
3 large tomatoes, diced
1 cucumber, diced
1 cup grated cheese
Method:
Brown mince in a large frying pan. Drain. Return mince to pan and stir in taco seasoning. Add water and bring to a boil. Turn heat down and simmer 10 minutes, until sauce has thickened. Warm taco shells. Place 2 tablespoons of meat in the bottom, top with lettuce, tomato, cucumber and grated cheese.
Vegetarian Taco Sauce
Ingredients:
1 tin Sanitarium Tender Pieces, minced
1 tbsp oil
3/4 cup water
3 tbsp taco seasoning
200g pkt corn chips
1/2 head of lettuce, shredded
3 large tomatoes, diced
1 cucumber, diced
3 baby beets, drained and diced
1 cup grated cheese
Method:
Dice or mince the Tender Pieces. In a large fry pan heat oil and add Tender Pieces. Cook 1 minute until just starting to brown. Add taco seasoning and mix well. Add water, stirring to combine. Bring to a boil, turn heat down and simmer 10 minutes until sauce has thickened. To serve put a layer of corn chips on a plate. Spread 2 tablespoons of sauce over corn chips. Top with shredded lettuce, tomato, cucumber, beetroot and top with grated cheese.
Mum's Taco Sauce
Ingredients:
1 cup TVP
1 cup boiling water
500g mince
1 tin baked beans, mashed
3/4 cup water
3 tbsp taco seasoning
12 taco shells
1/2 head lettuce, shredded
3 large tomatoes, diced
1 cucumber, diced
Sour cream
1 cup grated cheese
Method:
Pour boiling water over TVP and set aside. Brown mince in a large non-stick fry pan. Drain. Return mince to pan and add TVP, baked beans and taco seasoning. Stir to combine. Add 3/4 cup water. Bring to a boil, turn heat down and simmer 10 minutes until sauce has thickened. Warm taco shells. In the bottom of each taco shell place 2 tablespoons of sauce and top with shredded lettuce, tomato, cucumber, grated cheese and sour cream.
MOO Taco Seasoning
Ingredients:
2 tsp ground chilli powder (more or less to taste)
1 tbsp ground cumin
1 tsp paprika
1 tsp sugar
1 tbsp onion powder
1 tbsp garlic powder
1 tsp ground oregano
1/2 tsp salt
Method:
Mix all ingredients together and store in a small, air tight jar. To use: 3 tablespoonfuls is the equivalent of 1 packet of commercial taco seasoning mix.
This week we will be eating:
Sunday: Roast Lamb
Monday: Sausage Wellingtons, vegetables
Tuesday: Lasagne, salad, garlic bread
Wednesday: Shepherd's Pie
Thursday: MOO Pizza
Friday: Lamb curry, steamed rice, pappadums
Saturday: Chicken enchiladas

5. The $300 a Month Food Challenge
Waste Not, Want Not: Using up the bread crusts
Bread is the most wasted food in the kitchen, with the crusts, or ends of the loaves, being the most thrown out food in Australia. You can zero your bread crust waste by using them up and give you a little more room in your grocery budget.
First off, of course, is bread crumbs. I just save the crusts in a bag in the freezer until it is full, then pop them on a tray and put them into the oven after I've take the roast out. The residual heat from the oven is enough to dry them. I leave them overnight to make sure they're completely dry, then whizz them in the food processor until they're as fine as I like. In winter I'll put them on cake racks and sit the racks on top of the wood heater for the day to dry them too.
Breadcrumbs aren't that expensive, about $1 for 500g, but if you use them regularly that can add up over a year.
For seasoned breadcrumbs I add mixed herbs, about 1 tablespoon per kilo of crumbs.
And there's two things I can cross off the shopping list.
Another way to use bread crusts is to make frugal fritters. I'm sure this was a "things are desperate" meal Mum made when I was a child, but boy did we love them. We never thought of them as a poor dinner, but rather a treat.
Frugal Fritters
Ingredients:
2 to 3 cups of bread crusts
1 small onion finely chopped
1/2 cup parsley chopped
2 eggs
1 tbsp milk
1/4 tsp dry mustard
oil for frying
Method:
Process bread crusts, onion and parsley in a food processor until finely ground. Add eggs, milk, mustard. Process until well blended and pliable. Heat a small amount of oil in a pan. Drop tablespoons of mixture into the hot oil. Cook until golden brown, turn and cook other side. Makes 24 small or 12 large fritters.
We had these as is with veggies and gravy or good old tomato sauce, or with salad and leftovers didn't exist when Mum made these fritters.

Q. I would like to know if you have a recipe for MOO meat tenderizer as I can't find the commercial one that you used to be able to buy at the supermarket. If possible, please, a recipe without pineapple or paw paw as they can be quite expensive. Carol
A. If you feel your meat needs a tenderizer you can use bicarb soda. Simply sprinkle 1 teaspoon of bicarb soda over 1 kilo of meat, rub in with your fingertips and leave to marinate for 15 minutes (no longer or the meat may end up tasting of bicarb soda). Rinse off with cool, clean water thoroughly, being sure you get all traces of the bicarb soda off the meat. Pat meat dry with paper towel (dry meat browns better too). Cook as per the instructions in your recipe. Marinating for at least two hours in a vinegar-based marinade will also help to tenderize meat. There are a lot of really tasty marinades in the Marinades Recipe File.

How do I change my email address?
This one is easy. Members can update their email address or any other details by clicking on "Edit Profile" directly under their membership number after they have logged in to the Member's Centre. Subscribers to our free newsletter can use the Change Your Address form (under Customer Service in the menu) and fill it out. Once you've filled it in click the send button and we'll do the rest. Please remember to include your old email address so we can find it in the list as well as the new one.
How do I know when my membership should be renewed?
When you login to the Member's Centre you will be told how many days of membership you have left once you have 30 days left. Just click on the link to renew and your membership will just continue on, uninterrupted.
What will you do with my email address?
We never rent, trade or sell our email list to anyone for any reason whatsoever. You'll never get an unsolicited email from a stranger as a result of joining this list.
