Making Meals Cheaper - Meatless Meals
With the cost of meat sky-rocketing in recent months, meat on the plate is becoming a treat.

Bringing some meatless meals into your meal plan gives you some room in the meat budget so you can still enjoy the cuts you like, without going broke.

Macaroni Patties
Ingredients:
1 cup cooked macaroni
1-1/2 cups rolled oats
1 large onion, grated
2 eggs
1/2 tsp salt
1 tsp dried parsley
1 cup breadcrumbs
Oil for frying

Method:
Combine cooked macaroni, rolled oats, onion, 1 egg and parsley. Form into patties. Dip in egg, then breadcrumbs. Chill 30 minutes. Heat oil in frying pan. Fry cutlets on both sides until golden brown. 

These patties can be made ahead and stored in the fridge until cooked. They can also be baked in the oven instead of fried.

Serve hot with veggies and gravy, or cold with salad. They are also good cold the next day if you slice and add to a salad sandwich or roll.

Eggplant Fritters
Ingredients:
1 large eggplant
1 egg
1/2 cup cooked rice
1/2 cup plain flour

Method:
Dice eggplant and cook until tender. Mash. Stir in egg and rice. Shape into patties. Dust in plain flour. Fry in hot oil until golden brown on both sides.

Serve with tomato sauce and steamed veggies, or oven wedges and a salad.

Washington Chowder
Ingredients:
2 medium potatoes, peeled and diced
1 small onion, thinly sliced
2 cups water
1 tsp salt
1 tin diced tomatoes
3/4 cup corn kernels
1/2 cup cream

Method:
Cook potato and onion in water until tender. Add tomatoes and corn. Reheat, watching that the soup doesn't catch on the bottom. Remove from heat, stir in cream and serve with crusty rolls.

Burgers
Ingredients:
1 onion, grated
1 teaspoon Vegemite 
1 cup boiling water
1 cup gluten flour
1 cup fresh breadcrumbs
1 can pineapple rings in juice
Oil for frying

Method:
Stir Vegemite into boiling water until dissolved. Add onion, gluten flour and breadcrumbs and water to bowl of food processor. Process until the mixture comes together - this only takes a few seconds. If you don't have a food processor, use a fork to mix. Form into burgers. Heat oil in frying pan. Fry on one side. Before turning, add pineapple slice to top, flip and fry until golden brown. Serve on toasted buns with lettuce and sliced tomato.

Cottage Cheese Loaf
Ingredients:
500g cottage cheese
1 cup chopped walnuts
1 onion, grated
3 eggs
1 cup fresh breadcrumbs
3/4 cup celery, sliced
1 tsp sale
1 tsp Vegemite
1/2 tsp mixed herbs
2 tbsp vegetable oil

Method:
Pre-heat oven 180 degrees Celsius. Line a loaf tin with baking paper Mix all ingredients together. Press into loaf tin. Bake for 45 minutes until set and browned on top.
