One Bowl Cake

​I mentioned on the Cheapskates Club Show about my go-to simple cake recipe. It's so simple I think it is the first cake recipe I was allowed to bake on my own. I've been making it since I was a child, and it's never let me down.

The basic cake is delicious as is, but there are so many variations to make it different, another reason it is my go-to. 
​One Bowl Cake
Ingredients:
1 cup SR flour
1 cup sugar*
1/2 cup milk
2 eggs, beaten
1 tsp vanilla (optional)
3 tbsp butter, melted

Method:
Pre-heat oven to 180 degrees Celsius. Line a cake tin with baking paper, or grease and flour well.
Put all the ingredients in a bowl and mix until combined. This can be done by hand with a spoon, or with an electric mixer. Pour batter into cake tin and bake 25 - 30 minutes or until a skewer inserted in the centre comes out clean. Let sit in tin a few minutes then turn out onto a rack to cool completely before icing.
​Notes:
*I have cut the sugar to half a cup, and the cake is sweet enough for our tastes. The original recipe, in my recipe book, states 1 cup. If you are making the cake for the first time I suggest you stick to the recipe and then adjust the sugar if you want to.
​Variations:
Orange cake: substitute 1/2 cup orange juice for the milk and add 1 tsp grated orange rind.
Chocolate cake: add 3 tablespoons cocoa to the mixture.
Coffee cake: dissolve 2 teaspoons instant coffee in the milk and add to the mixture.
Coconut cake: add 1 cup desiccated coconut to the mixture and increase milk by two tablespoons. Optional: add 1/2 teaspoon coconut essence.
Cherry cake: add 1 packet glace cherries, halved, to the batter.
Sultana cake: add 1 cup sultanas to the batter.
Banana cake: add 2 mashed bananas to the batter. Increase baking time by 5 - 10 minutes.
Choc Chip: add 1 cup choc chips to the cake batter.
Cake tins:
Lamington tin: bake 20 - 25 minutes
20cm round tin: line and bake 25 - 30 minutes
Loaf tin: line and bake 35 - 40 minutes
Cup cakes: bake 12 - 15 minutes
Muffins: bake 15 - 18 minutes
Texas size muffins: bake 18 - 22 minutes
Baking times will vary depending on size of cake tin and your oven. Cake is cooked when a skewer inserted in the centre comes out clean.
