Orange Cake in a Mug
Ingredients:
3 tbsp SR flour
1 tbsp white sugar
1 tsp orange zest (or lemon for lemon cake)
1-1/2 tsp vegetable oil (not olive - it leaves a taste)
2 tbsp milk
1 tbsp orange juice (or lemon juice for lemon cake)
1/2 tsp vanilla extract
Method:
Spray the mug with cooking spray or lightly grease it with unsalted butter. Sift the dry ingredients into the mug. Add oil, milk, orange juice and vanilla. Whish with a fork until well mixed and lump free. Cook in microwave on HIGH for 1 minute. The cake should rise to the top of the mug and be firm to the touch. If the centre is still damp, let it sit for a minute, do not over-cook. Serve immediately.
