Tip Store: Pressure Cookers
Silverside in the Pressure Cooker
For silverside, I soak the piece of meat for an hour first off.
Then put some water in the pressure cooker, add a bit of dried mint, a tablespoon or so of brown sugar, 3/4 cup vinegar and about 1/2 teaspoon or so of ground cloves.
Rinse meat and place in cooker. Top up with water till the meat is just covered.
When the pressure is right, steam coming out of vent, turn down slowly over 10 minutes or so and then cook for an hour
for a small piece of meat. If it larger or a few kilos, cook for at least another 1/2 hour.
Slowly release the steam so as not to get burnt and then leave the meat in the cooker until ready to serve.
Lovely and moist. I buy pickled pork at times, remove the bone so that the meat fits in the cooker and there is hardly any difference in taste to the silverside. Cheaper to buy too.

Cooking in a Pressure Cooker is Cooking in a Pressure Cooker
I have purchased two electric pressure cookers from Aldi and I also found the recipe ideas were not great. However, having used other pressure cookers for at least 45 years of our married life, I still cook my silverside with vinegar and onion and brown sugar and you could add mixed herbs if you like with a tiny sprinkle of curry and mustard and I then cook silverside for 45 minutes after the valve starts to rotate if it's a medium size and it's perfect. Any normal stews I still cook on 25 minutes after the calve rotates. I do these things just on the normal pressure cooker cycle and with any soups I cook them on the soup cycle for around the 25 minutes, again after the valve starts to rotate. I haven't had a problem at all with any of my stews or soups or silverside. I hope this helps you out.
