Rosemary Salt

If you have an abundance of rosemary in your garden, of course you'll use some fresh. You may make rosemary infused oil with some. You'll dry some to use in cooking. And if you love good seasoned salts, you'll make rosemary salt. 
Fresh rosemary sprigs

It's simple, and so quick you won't believe it, because the rosemary is dried in the microwave!

Yes, the microwave, and in just two minutes. 

Rosemary Salt
4 sprigs fresh rosemary about 15cm long
1 tablespoon salt*

Lay the rosemary on paper towel and place in the microwave.
Cook on HIGH (1000 watt) for two minutes, in 30 second bursts. Flip the sprigs every 30 seconds so they dry completely. When you open the microwave, it will be steamy - this is normal, don't panic.

The rosemary should be crisp, indicating it is completely dry.
Remove the leaves from the sprigs and using your fingers, crunch them into a powder. If you have a mortar and pestle or a spice grinder you can powder the rosemary right down. I prefer the powder to have a little texture.
Combine with the salt. Store in a clean, air-tight jar.

How to Use Rosemary Salt
As a gourmet gift!
Use it as a seasoning on lamb chops or roast meats.
Sprinkle it over wedges or hot chips.
Stir it into sour cream with a little garlic powder for a dip.
Sprinkle it over the top of focaccia before baking.
Add it to corn fritters or corn muffins.
Sprinkle it over the top of scrambled eggs.
Sprinkle it over lamb before roasting.
Sprinkle it over veggies before roasting.
​Add it to a small dish of olive oil for dipping bread.
