Ingredients:
1 tbsp celery seed
2 tbsp rock salt or coarse salt
 
Method:
Mix together. Store is a small, air tight jar.

Ingredients:
30g celery seed
60g salt

Method:
Grind the celery seed with a coffee grinder, mortar and pestle or stick blender with the chopping blade attached.  Combine with the salt and mix well.  Store in a clean, dry, air-tight spice jar.

curry powder

Ingredients:
2 tbsp coriander seeds
1 tbsp rice
2 tbsp cumin seeds
2 tbsp fenugreek seeds
2 tsp mustard seeds
4 cardamom pods
4 cloves
5cm piece of cinnamon bark
4 bay leaves

Method:
Combine all ingredients with a mortar and pestle or blender or grinder until finely powered. Store in an airtight, screw top jar.

garam masala

From allrecipes.com
"This is a quick Garam Masala (Indian spice) mix. Garam Masala is better when made with whole spices that have been roasted and ground, but this is a quick and easy substitute that's pretty good."

Ingredients:
1 tablespoon ground cumin
1 1/2 teaspoons ground coriander
1 1/2 teaspoons ground cardamom
1 1/2 teaspoons ground pepper
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg

Method:
Mix cumin, coriander, cardamom, pepper, cinnamon, cloves, and nutmeg in a bowl. Place mix in an airtight container, and store in a cool, dry place.

garlic powder

Ingredients:
Garlic Cloves

Method:
Pre-heat oven to 80 degrees Celsius. Peel garlic cloves. Slice into thin slivers.  Place the garlic slivers on a baking paper lined baking sheet. Place in oven (or dehydrator) and bake until thoroughly dry.  You will know the garlic is dry enough when you can crush the slivers between your fingers. Allow the garlic to cool completely. Grind with a coffee grinder, food processor, stick blender or mortar and pestle until the slivers are powdered.  Store in a clean, dry, air-tight spice jar in a dark cupboard.  This powder can also be stored in the freezer.

90g table salt

Method:
Combine garlic powder and salt in a clean, dry, air-tight spice jar. Shake well to combine.

mexican chilli powder

Ingredients:
1 tsp paprika
2 tsp ground cumin
1 tsp cayenne pepper
1 tsp oregano
2 tsp garlic powder
 
Method:
Combine all ingredients with a mortar and pestle or blender or grinder until finely powered. Store in an airtight, screw top jar.

onion powder

Ingredients:
Brown onions

Method:
Pre-heat oven to 80 degrees Celsius. Peel and finely chop your onions.  Spread onions on a baking paper lined baking sheet. Bake until dry. The onions are dry when you can crumble them easily between your fingers.  Allow the dried onion flakes to cool completely. You can now either bottle them as they are and use as onion flakes, or grind them with a mortar and pestle, stick blender or coffee grinder until they are a fine powder. Store in a clean, dry, air-tight spice jar. This powder can also be frozen.

Ingredients:
 3 tbsp salt
1 tbsp paprika
1 tbsp celery salt
2 tbsp garlic powder
1 tsp. sugar
1 tsp. onion powder
1/2 tsp. cayenne
1/2 tsp. turmeric
 
Method:
Combine all ingredients with a mortar and pestle or blender or grinder until finely powered. Store in an airtight, screw top jar.

taco seasoning mix

Ingredients:
2 tsp ground chilli powder
1 tbsp ground cumin
1 tsp paprika
1 tsp sugar
1 tbsp onion powder
1 tbsp garlic powder
1 tsp ground oregano
1/2 tsp salt
 
Method:
Mix all ingredients together and store in a small, air tight jar. To use: 3 tablespoonfuls is the equivalent of 1 packet of commercial taco seasoning mix.
