The Best and Easiest Chocolate Frosting

Chocolate cake is a standard in our house. If I need a cake in a hurry I go to my old favourite Simplicity Chocolate Cake recipe and whip up one or two (usually two - it makes a great layer cake) and as a cake, it never disappoints. 

But if I want to really impress, I make frosting. Not icing, but frosting, and it is good. And quick and easy, and the ingredients are always in the pantry too.

You'd think icing was icing, or frosting was frosting, but once you've tried this chocolate frosting you'll really understand the difference, it is that good.

​Best Easiest Chocolate Frosting
Ingredients:
1 cup softened butter*
1/2 cup cocoa powder, sifted
5 cups icing sugar, sifted
1 teaspoon vanilla
3-4 tablespoons milk

Method:
Beat butter and cocoa together until smooth in large bowl. I use my electric mixer, but it can be done by hand, it just takes a few minutes.  Stir in vanilla and icing sugar. Slowly drizzle in milk until frosting reaches desired consistency. Scrape sides and beat again until light, fluffy and smooth, 1-2 minutes.

This makes enough frosting to cover a 20cm double layer cake or 24 regular cupcakes.

*Butter works best, but you can use margarine if you prefer. It won't taste as rich as it does with the butter, and it won't firm up quite as well, but margarine is a reasonable substitute.

Trust me, it is good! So good I don't share the beaters, I lick them myself!
