What to do when You Need Freezer Room? Make Veggie Powder!

What to do when there's no freezer room? Take out some packets and dehydrate them! 

I needed some freezer room yesterday, so I took out four soup packs and dehydrated them. Each pack contained carrot, celery, celery leaves and onion. Took 15 hours as they were quite chunky, were frozen and it is so humid here at the moment.

I used my Sunbeam dehydrator for this batch, and three trays with the fine mesh over them. Some of the celery dried to very small pieces so the mesh stopped them falling through the trays. 

Set the temperature to 35 degrees Celsius and the timer for 12 hours. They were still not dry, so set it for another 3 hours and they were perfect. 15 hours dehydrating time all up.

Once properly dried (they were crisp and cracked when snapped) I powdered them using the coffee grinder (you could use a vitamiser if you have one; a food processor won't get the pieces small enough to turn to powder).

The powder can be used to add to Cup of Anything Cup-a-Soup. make veggie stock, flavour gravy, add to soups and casseroles, add to savoury muffin mix or scone mix - and now it's shelf stable.

​And the gap in the freezer was filled, so back to no more freezer room!
