31 Days of MOO 2017 No. 10 Cheats Lamingtons
If you love lamingtons, but are not much of a baker, buy plain sponge cake from the supermarket then make your own. This is also a great activity for kids to do.
Ingredients:
1 ready-made sponge cake slab
2 cups icing Sugar
1/3 cup cocoa
¼ cup milk
¼ cup boiling water
2-½ cups coconut
Method:
Cut the sponge cake into 8cm x 6cm rectangle cakes (approximately).
Sift the icing sugar and cocoa into a medium bowl. Add the milk and boiling water and mix until smooth.
Pour the coconut into a small bowl.
Use a fork to individually dip the cakes into the chocolate syrup then flip them over. When covered with syrup remove with the fork and place them in the coconut.
Flip the cakes over until they are covered in coconut. Place the lamingtons on a wire rack until the icing is set.
