31 Days of MOO No. 13 MOO Pickling Spice
It's that time of year when we're all busy making chutney and pickles to not only enjoy during the year, but to use up those excess tomatoes, zucchinis, cucumbers, onions, capsicums and chillies our gardens are supplying.
Most recipes call for pickling spice, which you can buy with the herbs and spices at your supermarket, where you'll pay a premium. Or you can open your cupboard and whip up your own, in a few seconds, and for a fraction of the price.
MOO Pickling Spice
Ingredients:
1 tbsp allspice
1 tbsp whole black peppercorns
1 tbsp black or yellow mustard seeds
1 tbsp whole cloves
1 tbsp coriander seeds
1 tbsp chilli flakes (optional; feel free to cut the amount down or leave them out entirely if you don't like or want hot pickles)
2 tsp ground ginger
1 tsp nutmeg
2 bay leaves, crumbled
1 cinnamon stick, crumbled
Method:
Toast the peppercorns, mustard seeds, cloves and coriander seeds in a dry frying pan for a few minutes for a deeper flavour before adding the other ingredients. Allow to cool completely, then combine in a glass jar with the remaining spices. Shake well to combine. Makes 1/2 a cup of pickling spice.
