31 Days of MOO No. 14 MOO Fettuccini Alfredo Mix
Alfredo noodles are one of our favourite side dishes. The cheesy deliciousness goes well with chicken or rissoles or sausages or fish, they're even good on their own or with a handful of vegetables tossed in.
This mix is one I keep in the pantry, ready to use. I like MOO mixes, they're the Cheapskates version of packet convenience foods without the cost or the nasty ingredients. When I'm making a batch I do 12 at a time, they keep in the pantry for up to three months (if you want to keep them longer freeze them).
Fettuccini Alfredo Mix
Ingredients:
250g fettucine*, broken into pieces (whole grain pasta works fine)
2 tbsp plain flour
2 tbsp powdered instant skim milk
1/2 tsp basil
1 tsp lemon pepper
1/2 tsp garlic powder
1 tsp salt
1/2 cup parmesan cheese - the dried cheese in the packet, not fresh
Method:
Mix all ingredients and store in a ziplock bag. To prepare. pour mix into a large saucepan with 2 cups of water and 2 cups of milk. Stir well until all the powders are blended and noodles are well moistened. Bring to a boil and reduce heat to a simmer. Simmer for 15-20 minutes or until noodles are tender. Remove from heat and allow to cool for 3-5 minutes. Sauce will thicken as it cools.
Cost: 80 cents - even cheaper than Continental Noodles and Sauce on sale or Aldi pasta and sauce regular price.
*Note: I don't buy fettucine, it's too expensive. I simply either break up spaghetti or use macaroni or penne pasta instead.
