31 Days of MOO No. 16 Basil Pesto
Ingredients:
2 cups packed fresh basil
3 tbsp pine nuts
4 tbsp nutritional yeast
3 cloves garlic
squeeze of lemon
1/2 cup olive oil
pinch of salt
Method:
Put basil, pine nuts, nutritional yeast and garlic into a food processor. Process until they become a paste. Keeping the processor running, very slowly drizzle in the olive oil until the pesto reaches a consistency you like. Pour into a sterilised glass jar with a tight fitting lid. Store in the fridge.
