31 Days of MOO No. 15 Vegan Margarine

​This margarine does't use milk or milk powder, so it is suitable for vegans.

Ingredients:
500g coconut oil
2/3 cup sunflower oil
2/3 cup canola oil
1 cup full cream coconut milk (no, you can't sub out low fat coconut milk)
1-1/2 tbsp Dijon mustard
1 tbsp turmeric
2 tsp salt

Method:
Create an ice bath by filling a large heat-proof bowl with cold water and cie cubes.
In a heatproof bowl combine coconut oil, sunflower oil, and canola oil. Heat over boiling water until the coconut oil has liquified. 
Add remaining ingredients and stir well to combine.
Continue stirring until the mixture reaches 50 degrees Celsius. Transfer the bowl to the ice water bath and stir until the mixture starts to firm up. This will take a few minutes.
Once the margarine is firm, transfer to a clean container with a tight fitting lid and refrigerate. Will keep in the fridge for up to two weeks.

This margarine is good as a spread for toast or sandwiches, use it in stir-fries or for basting grilled meats or frying meat or chicken.  It can also be used in savoury baking (cheese muffins, herb scones etc.).
