31 Days of MOO No. 26 The Best Ever Roast Chicken Seasoning

​This is better than bbq chicken seasoning and you can whip it up in under a minute using basic pantry ingredients. Don't be tempted to cut the brown sugar or leave it out - it is the vital ingredient. The brown sugar will caramelise and melt into the herbs and spices and create the perfect roast chicken skin. 

Ingredients:
1-1/2 tbsp brown sugar
1 tsp paprika
1/2 tsp dried oregano 
1/2 tsp thyme
1/4 tsp garlic powder
1/2 tsp salt 
1/2 tsp ground black pepper

Method:
Combine all ingredients together.

To use: 
Whole chicken: dry skin, then rub the spice mix over the entire chicken. Roast in a pre-heated 220C oven until chicken is cooked through, the internal temperature should be 75c (165F).

Chicken fillets: remove the skin and dry thoroughly. Pound the fillets to 15mm thickness. Drizzel fillets with 1 tsp oil and rub over both sides of fillets. Rub spice mix over both sides of chicken fillets. Bake on a foil or baking paper lined tray at 220C for 18 - 20 minutes or until chicken is cooked through. Serve immediately.
