​31 Days of MOO No. 27 MOO Graham Crackers

We see a lot of recipes that call for Graham crackers and we don't really have anything like them in Australia. These lightly spiced, slightly sweet crackers are used often for biscuit bases for pies and tarts and slices, and they are easy to make, so no more substituting something that gives a less than stellar result.

Ingredients:
225g softened Butter
3/4 cup brown sugar
1/2 tsp salt
3 tbsp honey
1-1/2 cup plain flour
1-1/2 cup wholemeal flour
1 tsp bicarbonate soda
1 tsp cinnamon

Method:
Combine butter, brown sugar, salt, cinnamon and honey in a large mixing bowl. Mix until blended.
Gradually add in flours, alternating between them until completely mixed.
Roll out dough between sheets of wax or parchment paper to about 3mm thickness.
Cut/score into individual cracker sizes (a pizza cutter is good for this) and use a skewer or toothpick to make holes in the crackers.
Place in freezer for 30 minutes to harden.
Line a biscuit sheet with silicone or parchment paper.
Preheat oven to 180 degrees Celsius.
Separate crackers and place on prepared biscuit sheet.
Bake until crackers begin to brown, about 10 minutes (don't overbake).
Remove from oven, place on cake rack to cool.
