31 Days of MOO No. 3 Waffles
We love waffles, and not just for breakfast or as a dessert. They make a great, quick lunch too topped with scrambled eggs or leftover stew.
Ingredients:
1 cup SR flour
1 tsp sugar
2 tbsp oil
1 cup milk
2 eggs
Method:
Mix all ingredients together, beating until smooth. Heat waffle iron. Pour 1/2 cup batter per waffle into the waffle iron. Cook for 2 - 3 minutes or until waffles are golden and crisp. Makes 6 waffles.
Notes: I have used wholemeal spelt flour and the waffles were absolutely delicious.
I have also used melted coconut oil in place of vegetable oil and again, the waffles were delicious.
For savoury waffles, leave out the sugar and add a pinch of salt.
