31 Days of MOO No. 18 Tortillas
Tortillas are so very easy to MOO, and so very cheap. I'll also add that fresh tortillas leave the bought ones in the dust. There is nothing quite as delicious as a freshly cooked tortilla wrapped around your favourite filling for a quick, easy and inexpensive meal.
These tortillas are bigger than the ones you can buy, being 20cm in diameter. You can make them smaller and get 12 from the dough if you want to.
If you have a tortilla press, they'll be nice and round. But don't worry, you can roll them with a rolling pin, and by rotating them after each roll, you'll get a nice round tortilla.
Ingredients:
3½ cups plain flour
1¼ tsp salt
¾ tsp baking powder
1/3 cup shortening*
1 cup warm milk (40 to 50C)
Method:
Combine flour, salt and baking powder; stir well. Cut in shortening with pastry blender until mixture resembles coarse meal. Stir in milk, and mix well. Turn dough out on smooth surface, knead about 3 minutes. Divide dough into 10 equal portions. Roll out each portion with a rolling pin into very thin circle, about 20 centimetres in diameter, turning dough and rolling on both sides. Heat an ungreased skillet over medium heat; cook tortillas about 2 minutes on each side or until lightly browned, being careful no to let tortillas wrinkle. Pat tortillas lightly with spatula while browning the second side. Serve hot.
Makes 10 tortillas.
Notes:
I use coconut oil for the shortening as I always have a jar in the pantry. You can use copha or Fairy cooking margarine.
Cost to make 10 15cm tortillas: $1.77 or 18c each
Cost to buy pack of 10 15cm tortillas: $5/250g or 50 cents each
Saving: 32 cents per tortilla or $3.23 per 10
