31 Days of MOO No. 27 Mock Chicken Sandwich Filling
This is a recipe from my childhood. My mother made this mock chicken often, and we just loved it. We thought it was super special, a real treat when we opened our lunchboxes and found mock chicken spread on our sandwich. She'd make finger sandwiches for church lunches with this filling too, and they were always a hit.
Fast forward a few years, and my kids loved this on their lunches, I still make it for Wayne's sandwiches (although it is really nice on Thins with some sprouts) and it’s really nice in Club sandwiches too. Serve it in vol-au-vent cases for finger food for parties – it’s a real hit!
Ingredients:
1 tbsp butter
1 tomato, sliced and diced
1 egg, well beaten
½ teaspoon mixed herbs
1 tbsp grated cheese
salt & pepper
1 onion, grated
1 dessertspoon plain flour
Method:
Place the butter, cheese, tomato and seasonings in a saucepan and bring to boil. Add beaten egg, onion, herbs and flour. Stirring continuously, bring to the boil and cook 2 or 3 minutes or until thick. Store in a closed container in the fridge.
