31 Days of MOO No. 28 Chicken and Ham Spread
Enjoy it hot on toast or on sandwiches with lettuce or sprouts. Use it as a dip with veggie sticks. This spread is delicious and is a great way to use up that little bit of cooked chicken and the last couple of slices of ham in the fridge to stretch them.
Ingredients:
1 cup cooked chicken, diced
2 tbsp mayonnaise
1 tsp mixed mustard
½ cup chopped ham
2 tsp brandy (optional)
salt and pepper to taste
pinch dried tarragon
Method:
Place all ingredients into a blender or food processor and mix until smooth. Store in an airtight container in refrigerator. Spread on biscuits or use with vegetable sticks of carrot and/or celery. Keeps for up to a week.
