Baking for the Weekend
This is a version of double-up cooking; not every recipe is doubled, but could easily be. Instead it's a short batch effort, very quick and easy, to get food prepared for the weekend.
On a Friday I cook for the weekend. I don't cook at all on Saturday, and Sunday is easy with a roast for dinner.
Last night before I went to bed I put a chicken carcass and some sad veggies in the slow cooker to make stock. Right now it is in the pressure cooker with chicken, carrots, celery, celery leaves and onion to make chicken soup. That will be our lunches with toast and it smells great already.
Dinner tomorrow night is meat pie. That's easy to do with a jar of my home canned mince, some TVP, an onion and a jar of home canned mushrooms.
The oven will be on to bake the pie, and I like to fill all the shelves to save money (and time and energy).
Two sad bananas mashed and added to a basic cake mix made nine mini banana cake loaves.
While the flour and sugar were out, I made a plain cake in a round tin.
And just to mix it up, a brownie. Only one tray, they will be dessert tonight and tomorrow night.
It took 15 minutes to mix everything up and prepare the tins, just enough time for the oven to heat up.
While everything was baking I cleaned up the kitchen, made a cup of tea and sat down to recuperate until the timer went off.
Dinners and lunches for the weekend are sorted.
Morning tea, afternoon tea and desserts for the weekend are sorted.
And I get to relax instead of spending time in the kitchen over the weekend.
